Tantalizing fresh berries berries bubble in their own juicy sweetness underneath a lovely "cake" top that rises to cover them with a golden brown crown.2 eggs
1/4 cup sugar
1 teaspoon vanilla
Dash salt
1 c. milk
1/2 cup all-purpose flour
1/2 teaspoon baking powder
3 cups assorted fresh berries
Preheat oven to 400 degree F.
Spray 6 quiche dishes with non-stick spray and place on a cookie sheet. (This is necessary because these will bubble over during cooking and make a mess on the bottom of your owen!)
In a small bowl, combine eggs, granulated sugar, vanilla, and salt; whisk until light and frothy. Whisk in milk until combined. Add flour and baking powder; whisk until smooth.
If using fresh berries, place 1/2 c. fresh berries in each dish. (If using previously frozen (thawed) berries, place them in a bowl, sprinkle with 2 T. Flour, fold gently. Then divide into the dishes.
Pour batter over berries. (Batter will not cover berries completely.) Bake about 20 minutes or until puffed and golden brown. Serve warm. If desired, sift powdered sugar over each serving.
