One of my favorite comfort foods is Jalapeno Texas cheese fries, but in an effort to make them slightly healthier, we bake them, rather than frying them. This absolutely delicious dish is one that is best served rarely, as it's not the heart healthiest choice.You'll Need:
4-6 Large potatoes, scrubbed
3 T. Olive Oil
4-6 slices bacon, cooked & finely chopped
2 c. shredded cheddar cheese
Jalapeno slices (pickled jalapenos work wonderfully!)
1 tsp. seasoning salt
Preheat the oven to 425FCut the potatoes into fries (this is much easier if you have a french fry cutter!), dump into a large bowl. Pour olive oil over the fries, stirring to each fry. Divide the fries between 2 large cookie sheets, sprinkle with seasoning salt.
Bake for 20 Minutes, remove from oven turn the fries over to brown the other side, place them back into the oven for 12 more minutes.
Remove from oven, dish into individual serving casserole dishes, top with cheddar cheese, sliced jalapenos, and bacon bits. return to oven for 2-4 minutes to melt the cheese.
Serve with ranch dressing.
These can also be made by frying the french fries first, then adding the toppings and baking for a few minutes to melt the cheese.
