      Strawberry Ice Box Cake This simple no-bake Strawberry Eclair Cake will melt in your mouth, literally. It's full of decadent strawberries surrounded by vanilla cream and lightly drizzled with chocolate; Oh, and if that wasn't enough to get your tastebuds craving it, it takes only 15 minutes to whip up!

      You'll Need:
      1 sleeve
      of graham crackers
      1 box Vanilla Pudding Mix (the large box size)
      2 c. Milk
      2 cups Sliced Strawberries
      3/4 of a Tub of Cool Whip
      Chocolate for Drizzling (*optional)
      9x9 Pan
      I came up with this delicious treat while we were camping. I happened to have a box of pudding in the camper with an expiration of date of next month, so I figured I'd better use it up.

      In a 9"x9" dish or pan, make a layer of graham crackers. You'll probably need to snap the corners off to get them to fit snuggly. Spread a layer of sliced strawberries, about a cup. Strawberry Eclair Cake

      In a medium bowl mix the pudding mix and milk together until thickened. I didn't have a whisk or beater, so I used 3 forks together, but sticking out in different directions and taped together. (Well, I was camping, I had to improvise!) Mix in the cool whip until smooth & creamy.

      Pour a layer of the pudding mixture over the strawberries. Add another layer graham crackers, then pudding mix, then top generously with more berries. If you'd like, you can drizzle chocolate over the top. In this photo, my son had purchased a hershey bar along the way to the Campsite and we broke off about 1/4 of it, melted it in a coffee mug and then drizzled it over the top.

      Cover, then place the dessert in the freezer or a cooler filled with
      ice. It won't take long to freeze through.
