These savory sweet potato fries are an excellent way to take advantage of a healthy vegetable that is loaded with vitamin A, fiber and potassium. They have an additional benefit as well, they're cheap & very tasty. You'll Need:
- 1 lb peeled sweet potatoes cut into 1/4" match-sticks (1 lb AFTERthey're all cut up!)
- 2 T olive oil
- 1/2 tsp ground cumin
- 1/2 tsp oregano
- 1/2 tsp cilantro
- 1 tsp garlic salt
- 1 T. fresh chopped parsley or 1 tsp dried
- 1/8 tsp black pepper
Preheat oven to 425 degrees. In a small bowl combine cumin, oregano, cilantro, garlic salt, parsley, and pepper.
Place sweet potatoes in a medium size bowl or pile directly on baking sheet if you prefer & and drizzle with olive oil, carefully turn the sweet potato

until all of the pieces are evenly coated. If your family isn't shy, dig in with your hands, it's considerably easier

Sprinkle seasoning mix evenly over the top and mix well until all the pieces are evenly coated.
Once the sweet potato slices are well coated, arrange them in a single layer so that pieces are not touching each other. (this allows them to get crispy!)
Bake for 15 minutes, remove from oven, flip all the fries and then return pan to oven for an additional 15-20 minutes, the fries will be golden brown and a little crispy.
As you can see from the photo, these are a little more brown- I like them Very crispy!!
