Potato Broccoli mandarin salad combines several well known ingredients for a delicious, unexpected pairing that will make you crave more! For the Dressing, You'll Need:
2 eggs
1/2 cup sugar
1 teaspoon cornstarch
1 teaspoon dry mustard
1/4 cup white wine vinegar
1/4 cup Cold water
1/2 cup mayonnaise
1 pinch garlic powder (optional)
For the Salad:
4 cups fresh broccoli florets, washed and very well drained
3 c. Diced Cooked Potatoes, cold
1 can mandarin oranges, well drained
1 small red onion, sliced
10 slices bacon, cooked and chopped (Optional, but very yummy!)
In a saucepan, combine sugar and cornstarch- whisking together, add dry mustard (mix), eggs, vinegar and water over medium heat until the mixture thickens, stirring often.
Remove from heat, add mayo & garlic powder, mixing well. Cool
Marinate the broccoli in the cooled dressing mixture overnight. Add the cooked diced potatoes, (Generally, we use our orka steamer pan to cook the potatoes in 5 minutes flat, the cool them.), add the red onion, mandarin oranges and bacon. Gently fold to incorporate all of the dressing onto the salad.
A few tips- make sure the broccoli is nearly dry after washing. A salad spinner works wonders, otherwise the dressing will become watered down.
