It’s sounds delicious doesn’t it, wonderfully rich butterscotch flavor, “baked” in less than 2 minutes in a coffee mug, the perfect single serve treat for those with craving for something sweet . . .

But alas, I just couldn’t seem to get the texture to work for me using what I had on hand. First of all, I needed an egg replacement.. not just any egg replacement, a powdered egg replacement- because let’s face it- the demand for “instant” recipes is alot higher than the demand for recipes that require effort and work. I often wonder if people realize the amount of work that goes into creating a new mix recipe. For some, they just copy and paste others recipes, but for me, I adapt a recipe, then adapt it again and again and again until I figure out exactly what it will take to make it work. Sometimes, no amount of adapting will create an edible finished product.

I used:

1 c. packed brown sugar
1/4 c. Shortening
2 Tbs Cornstarch (in place of an Egg)- I didn’t happen to have powdered egg or milled flax seed
3/4 c. flour (all purpose)
1/2 c. finely chopped walnuts
1 tsp baking powder
1/4 tsp salt
1 tsp powdered vanilla

Combine brown sugar and shortening, until well blended. Add remaining ingredients and continue blending until it resembles a sugar scrub. To make individual mugs,

Measure 1/2 c. of mix into a Coffee Mug, add 2 Tablespoons of water, mix well with a fork. Microwave for 2 minutes. Cool a minute before eating.

Here’s why this is a “Frugal Flop” for me, despite the fact that this had fairly decent flavor, I didn’t have powdered eggs and although the cornstarch works ok, it causes the brownie to have a tougher texture than I would consider to be acceptable. It does still taste good and I’m sure most kids wouldn’t care and would gobble this up (case in point, my own kids devoured the remaining batch) but, it’s not one that I would put out there & say- make it for gifts.
