Here's a really filling meal that can be made dirt cheap. You'll need 4-6 large baking potatoes, prepared taco meat, salsa, sour cream, cheese, if desired.
To make this cheap I buy the ground turkey for $1.10 at Aldi's. (They have it for $1- 1.25 at TONS of grocery stores in the freezer section, you just have to look). Brown it, drain it (if necessary)- usually it isn't necessary at all because it's low in fat- add 1 can of diced tomatoes, and the equivalent of 1 pkg of taco seasoning. (MYO!)
Bake the potatoes, scoop out the baked tater' mix it with the prepared taco meat, top with a tablespoon of salsa and a Tablespoon of sour cream. Add cheese or anything else you want.
These can be made ahead of time and frozen (just omit the salsa & sour cream until ready to serve!)
