2013 $50 Weekly Menu Plan Week #21: Spring and summer veggies are already becoming abundant and it’s great to whip up fresh grilled veggies as a side dish. You’ll notice that some of this weeks recipes are actually Camping recipes as we hit the State Parks and enjoy all that nature has to offer. Somehow dining outdoors really brings out the flavor of the food . . .
and of course, it’s nice to be out of the kitchen and away from the daily grind. Somehow we always manage to spend a little more on food when we’re camping than when we’re home. This week we picked up the following: ground turkey, steak, zucchini, summer squash, bell peppers (green/red/yellow/orange), cream cheese, string beans, limes, apples, bananas, pears, raspberries, sliced ham, sliced cheese, bread, shrimp, celery, lettuce, shell pasta, frozen peas & frozen corn, tortilla chips for a grand total of $52.56
From our garden we harvested: Fresh radishes, tomatoes, jalapenos
Breakfast Choices this week:
- Egg White Omelets (Egg whites, diced veggies, seasonings)
- Toasted English Muffins or Morning Sunrise Sandwiches
- Fresh Fruit (always available) ( Apples, Home-Canned Peaches , bananas, pears, raspberries)
- Easy Drop Danish
- Eggs- Poached, scrambled, fried, etc
- Morning Glory Banana Nut Muffins
- Just Middles
- Apple Cinnamon Griddle Pancakes
- Campfire Cinnabursts
MondayMay 20th:
- Lunch: Leftover Hearty Taco Pasta
- Dinner:Tropical Chicken & Rice
Tuesday May 21st:
Wednesday May 22nd:
- Lunch: Grilled Ham & Cheese Sandwiches
- Dinner:Burnell Bomb Burgers, Grilled Veggies, Potato Salad
Thursday May 23rd:
- Lunch: Campfire Skillet Scramble, eggs- sausage, bell peppers, onions, potatoes, seasoning
- Dinner: Campfire Pig Greens, campfire roasted sweet potato bites
Friday May 24th:
- Lunch: BLT’s & Potato Salad
- Dinner:Key West Grilled Chicken, Grilled Zucchini
Saturday May 25th:
- Lunch: Key west chicken wraps
- Dinner:Steak & Corn Salad, Bacon Wrapped Stuffed Onions
Sunday May 26th:
- Midday:Gathering of Friends, Family, neighbors- bringing Shrimp Pasta Salad
Various Snacks:
- Fresh Fruit– Apples, Home-Canned Peaches, bananas, pears, raspberries
- Pickled Eggs
- Guilt Free Peanut Butter Fudge Swirl Brownies
- Deconstructed Jalapeno Popper Dip & Chips
- Deviled Egg Dip & Veggies
- Carrot Cake Bites
Drinks Available:A note about our drink offerings, while we do always have coffee and tea in the house, coffee is usually with breakfast, hot tea is usually in the evening and for the most part our other drinks consist of Water. We don’t “drink milk” at all, it is usually used in making homemade yogurt, or in cereals, baking, etc.* Iced Tea (Unsweetened & Sweet Tea, various flavors)

* Lemonade
