2013 $50 Weekly Menu Plan Week #28: Rain, Rain Go Away! This has got to be the wettest summer on record for our area and we’ve been contending with downpour after downpour for the last week and a half. If the rain keeps up, we might have to share a few fish recipes as they’ll be passing through our front yard! This weeks grocery total was $36.77 and we purchased the following . . .
Flour Tortillas, Mangoes, tuna, beef, yogurt, artisan lettuce, celery, cheese, yeast, fresh pineapple, 5 boxes of pasta, onions and wheat bread.
The following items included in this weeks menu plan were harvested from our small garden: Fresh radishes, tomatoes, jalapenos, Zucchini, Summer Squash, cucumbers, green peppers,red bell peppers, a few carrots, and okra. We swapped fresh jalapenos & okra with a neighbor for one of her super-plump home grown cabbages. (Seriously, who can grow cabbage in July in the South?! The woman is amazing!)
Breakfast Options for this week:
- Cinnamon Mango Muffins
- Toasted English Muffins with Homemade Blackberry Jam
- Walkaway Breakfast Burritos (Cheese, eggs, diced onions/green peppers/ sausage/ diced tomatoes, etc)
- Blueberry Maple Refrigerator Oatmeal
- Blackberry Refrigerator Oatmeal
- Eggs Over Easy, Poached, Scrambled or Omelets
- Morning Sunrise (Egg over easy with fresh sliced garden tomato & slice of cheese)
- Espresso Refrigerator Oatmeal– (our oldest LOVES these for snacks, so…)
- Lunch: Tuna Salad Wraps
- Dinner: Meatless Monday: Veggie Frittata
Tuesday July 9th:
- Lunch: Sun-Dried Tomato Egg Salad Wraps
- Dinner:Grilled Chicken Quesadillas, tomato salad
Wednesday July 10th
- Lunch: Cucumber Sandwiches
- Dinner: Fire Roasted Halibut Steaks, Pasta Salad
Thursday July 11th:
- Lunch:Fish Tacos (using leftover halibut)
- Dinner:Grilled Pork Chop with Mango Pineapple Salsa (*pictured), Salad
Friday July 12th:
- Lunch: Open Faced Grilled Cheese & Tomato Sandwiches
- Dinner:5-Spice Beef Kabobs with minted yogurt sauce, Honeyed Carrot Ribbons
Saturday July 13th:Jammin’ Music Fest- Huge Potluck style community gathering that starts around lunch and goes into the wee hours of the night
- Midday:Potluck Get-together, bringing Zucchini Squash Casserole, Deconstructed Jalapeno Popper Dip & Chips , Deviled Egg Dip & Veggies
Sunday July 14th:
- Midday:Boston Baked Beans, grilled hot dogs, cornbread, Coleslaw
- Fresh Fruit– Home-Canned Peaches, Fresh blueberries, Fresh blackberries, pears (picked locally), figs (picked off our trees)
- Fruit Salsa w/ Cinnamon Tortilla Chips
- Homemade Trail mix w/ Dried Berries (Cherries, Strawberries, Cranberries,raisins, 4 kinds of nuts)
A little clarification on the beverages listed above, while we do always have coffee and tea in the house, coffee is usually with breakfast/lunch, hot tea is usually in the evening and for the most part our other drinks consist of Water, We don’t “drink milk” at all, nor do we rely on it for any kind of “nutrition”. When a meal is listed as Midday, it generally means that we cook a late lunch/early dinner around 2-3 pm and we snack on fruit or have a salad, etc if someone is hungry. These are usually items that we eat more than once that same day, almost buffet style, particularly if we have friends over or we bring a hot dish to a gathering.
The hot dogs mentioned in this weeks menu are Red Hot Dogs (From New England!) that my family brought us during the holidays. Yes, we realize it sounds strange to people that Hot Dogs are on our Christmas Wish list, but you just cant beat a red snappah!
