2014 $50 Budget Menu Plan Week #11: If you’re in the USA, We hope that you’ve adjusted to the time change quickly this week! This week’s menu adds a few traditional flavors of St. Patricks day (yes, a bit early!) as well as some healthy homemade fruit and nut bars.
We purchased the following: lettuce, tomatoes, green peppers, bananas, pineapple, apples, carrots, cabbage, mushrooms, fresh broccoli, ricotta cheese, cottage cheese, tuna, cream cheese, sour cream, bread, coffee
From our Backyard: Fresh Eggs (Getting nearly 2 dozen per day again!)
From our Windowsill: Fresh Scallions, Fresh Basil
Total spent this week on groceries $45.02
Breakfast Options for this week: Fresh Fruit – Bananas, Apples, Pineapple
As usual We’ll throw together a fruit salad to snack on and eat for breakfast, along with the following choices:
- Banana Walnut Oatmeal
- Hard Boiled Eggs
- Irish Scones
- Egg White Omelets (Egg whites, diced veggies, seasonings)
- Homemade Bagels-Blueberry, Cinnamon Raisin or Onion
- Poached Eggs on Toast
- Homemade Larabars
- Fruit/Berry Yogurt Parfaits
Monday March 10th:
- Lunch: Southwestern Egg Salad wraps
- Dinner: Pizza Noodles (Pizza egg noodles with Marinara sauce, pepperoni, sauteed mushrooms & onions)
Tuesday March 11th:
- Lunch: Leftover Pizza Noodles
- Dinner: Monterey Chicken, Baked Potatoes, Salad
Wednesday March 12th:
- Lunch: Monterey Chicken Wraps
- Dinner: 3 Cheese Spinach Ravioli,Salad, Garlic Bread
Thursday March 13th:
- Lunch: Quick Ravioli Soup (using leftover cheese raviolis)
- Dinner: Italian Calzones, salad
Friday March 14th:
- Lunch: Tuna Pasta Salad
- Dinner: New England Boiled Dinner– Corned Beef, Cabbage, Red Potatoes, Yeast Rolls, Carrots (St Patties Dinner a few days early!)
Saturday March 15th:
- Lunch: Irish Egg Rolls
- Dinner: Montreal Grilled Chicken, Broccoli Slaw
Sunday March 16th:
- Midday: Corned Beef Hash,Eggs & Biscuits
Various Snacks & Desserts:
- Fresh Fruit Choices Available– Apples, Bananas, Fresh Pineapple, Fresh Berries
- Strawberry Sorbet
