2015 $50 Budget Menu Plan Week 14: Pay attention to those great April sales and stock the freezer with ham and the pantry with various coconut products (coconut flour, milk, butter and more).
For whatever reason, rice was on sale this week, so I took full advantage and picked up several different kinds to restock the pantry. Jasmine rice is our favorite, it’s light, non-sticky and works wonderfully in many different kinds of dishes. Arborio rice is a favorite to prepare risotto style dishes.

This week we purchased the following: milk, celery, lettuce, spinach, green peppers, yogurt, cream cheese, zucchini, summer squash, bananas, apples, pineapple, bacon, purple onions, shrimp, jasmine rice, arborio rice, mushrooms, bacon wrapped beef filets, cantaloupe, coconut milk, avocado, asparagus, cabbage

Total spent this week on groceries: $59.32

From our Backyard: Fresh Eggs (up to about 12 a day)

From our Windowsill/ Garden: a few fresh herbs in the windowsill– cilantro, basil, parsley, rosemary, scallions

  • Ham Salad Wraps (from Saturdays dinner)
  • 18 way Egg saladsandwiches or wraps
  • The Leftover Shrimp stir fry makes amazing wraps, just add a dash of lime juice for zest

  • Dinner: Mushroom Risotto, Bacon Wrapped Steak Filets, Salad

    • Where did you find the coconut products?

      Amazon Prime Pantry, Big Lots, Natural Food Stores, Co-Ops, etc all carry multiple types of Coconut products. I buy mine in bulk and make my own coconut flour when I need it.
