2015 $50 Budget Menu Plan Week 18: This weeks menu plan is a meat restocking week! Nothing is more frustrating than reaching into the freezer to realize that the mouthwatering chicken recipe you were about to make.. isn’t going to happen. Now, I can almost hear you saying, “But Wait, Isn’t that why you menu plan to begin with?”
Well, yes, it is. However, when you have kids in college studying for finals with their buds they don’t care about the menu plan posted on the fridge when they scarf down 4 packages of chicken in 2 days flat.
This week we purchased the following: Case of Boneless Skinless Chicken breast, lettuce, green peppers, spinach, radishes, raspberries, cream cheese, mango, cantaloupe, zucchini, cucumbers
Total spent this week on groceries: $102.41
From our Backyard: Fresh Eggs (about 10 a day)
From our Windowsill/ Garden: a few fresh herbs in the windowsill– cilantro, basil, parsley, rosemary, scallions, tomatoes
Breakfast Options for this week:
- Fresh Fruit (cantaloupe, berries)
- Raspberry Vanilla Cream Oatmeal
- Omelets
- Bagels & Cream Cheese
- Gingered Buttermilk Breakfast Cake
- Mango Almond Refrigerator Oatmeal
- Eggs-poached, over-easy, hard boiled, scrambled with leftover sauteed veggies & a sprinkle of cheese, etc
- Instant Oatmeal (18 Flavors)
Lunch Options for this week:
- Meatloaf Sandwiches
- 18 way Egg saladsandwiches or wraps
- Leftover Italian Chicken Noodle Soup
- Tomato Cucumber Salad
- Grilled Chicken Wraps (using leftover chicken)
Monday May 4th:
- Dinner: Tomato & Basil Stuffed Grilled Chicken Breasts, Zucchini Parmesan Crisps
TuesdayMay 5th:
- Dinner: 10 Minute Italian Chicken Noodle Soup, Cornbread Muffins or Italian Garlic Bread(depends on if I feel like making bread!)
Wednesday May 6th:
- Dinner: Meatloaf,Garlic Smashed Potatoes, Salad
Thursday May 7th:
- Dinner: Grilled Lemon Pepper Pork Chops, grilled potatoes & onion wedges drizzled in Garlic Butter, Salad
Friday May 8th
- Dinner: Amish Poor Man’s Steak, Riced Potatoes, Spinach
Saturday May 9th:
- Dinner: Graduation Party Gathering at Neighbors
Sunday May 10th: Happy Mothers Day!
- Dinner: Real Boston Baked Beans, Brown Bread, Red Hot Dogs, Macaroni Salad

- Fresh Fruit Choices Available– Cantaloupe, Canned Peaches, Frozen Strawberries/Blueberries
