I love tropical flavors, particularly when the weather is still a bit cool and I need a reminder that summer is on it’s way. Here’s a really delicious recipe for an accompaniment to grilled meat such as chicken or pork.
* 1 mango – peeled, seeded and diced
* 1 red bell pepper, seeded and diced
* 3/4 cup finely chopped red onion
* 1 tablespoon white sugar
* 1 tablespoon olive oil
* 2 tablespoons white wine vinegar
* 1 Large ripe avocado – peeled, pitted, and diced
* 1 teaspoon saltMix onion, sugar, olive oil, and vinegar in a bowl. In another bowl combine mango, bell pepper, and onion. Pour the seasoning over the mango mix, then very Gently fold in diced avocado, season lightly with salt, up to 1 tsp.
During the summer months when my garden is growing abundantly, I finely dice a fresh jalepeno to kick it up a notch.

AnonymousJust tried this recipe tonight and it was fantastic! I used it on top of some broiled cod, and since I didn’t have fresh jalapeno, I opted for some red pepper flakes and fresh cilantro on top. Two thumbs up!
