    1 medium-sized cauliflower, washed & Cut into small flowerettes
    2 tablespoons flour
    2 tablespoons butter
    1 cup milk
    1/4 teaspoon salt
    1/2 cup grated cheese
    1 cup buttered bread crumbs

    Cook the cauliflower in lightly salted boiling water (just enough to cover, leave the pan covered,cook approx 12 minutes, or until tender, and drain.

    Melt butter in saucepan until its bubbly, add flour & salt stirring well to form a paste, add milk, whisking continually over medium heat until mixture STARTS to boil, immediately add cheese, stirring until melted and fully incorporated. (do Not boil!)

    Place the cauliflower in a greased baking dish, pour the sauce over the top, sprinkle generously with the bread crumbs, bake for about 15 minutes at 375F, or until the crumbs are golden brown, and serve from the dish.
