For Each Quesadilla you’ll need
2 (6-inch) flour tortillas
3 T. chunky applesauce, divided
1 tsp cinnamon-sugar, divided
2 Tbs shredded Monterey Jack cheese
1 tablespoon vanilla yogurt, optional
Place a tortilla on ungreased baking sheet. Spread applesauce over tortilla; Sprinkle half of cinnamon-sugar over applesauce. Top with cheese and second tortilla. Sprinkle remaining cinnamon-sugar on top.
Bake at 400 degrees for 6-8 minutes or until golden brown. Cool 2 minutes.
Cut into quarters and serve with reserved applesauce and vanilla yogurt.
