    This delicious healthy breakfast serves 2:

    * 4 large egg whites
    * 1/8 teaspoon salt
    * 1/8 teaspoon pepper
    * 1 tsp olive oil
    * 1 teaspoon red onion, finely minced
    * 1 cup packed baby spinach leaves
    * 2 slices Cheese Singles
    * 1 English Muffin, split and toasted

    Sprinkle egg whites with salt and pepper (do not whisk or scramble!) In a small saucepan, heat olive oil and saute onion til soft (about 2 min), add spinach and continue cooking until it welts a bit. Pour seasoned egg whites over the sauteed veggies and cook until whites are opaque and set (3 minutes), flip, shut off heat, place cheese singles on top to melt evenly. Diving the egg mix equally and place them on top of halved toasted english muffins.

    Serve!
