    This is a recipe for Depression Meatloaf that my gramma used to make when we were kids:

    1 cup cooked rice
    1 cup peanuts crushed
    1 cup cottage cheese
    1 egg
    1 tablespoon oil
    1 teaspoon salt

    Mix everything all together. bake in a loaf pan for 30 minutes or until loaf is good and set, serve with warm gravy if you have it.

    Do carnivores catch on to the lack of meat or does it get past them? I have a carnivore to feed.

    I am going to try it, maybe adding mushrooms and eggplant to give a meat style of flavor.

    I am curious if you liked this recipe using mushrooms. I do not have all the ingredients but I may try it soon and see if my kids like it. My kids eat a gluten free diet and this could be a recipe to add to the mix:)

    I had my husband read through this recipe and he and I think it’s worth a go. If anyone is interested, I’ll post a review after the first of the month.
