This is a recipe for Depression Meatloaf that my gramma used to make when we were kids:
1 cup cooked rice
1 cup peanuts crushed
1 cup cottage cheese
1 egg
1 tablespoon oil
1 teaspoon saltMix everything all together. bake in a loaf pan for 30 minutes or until loaf is good and set, serve with warm gravy if you have it.

AnonymousI am curious if you liked this recipe using mushrooms. I do not have all the ingredients but I may try it soon and see if my kids like it. My kids eat a gluten free diet and this could be a recipe to add to the mix:)
