Sunday — Beef and mushroom stroganoff, salad, and green beans
Monday — Oven-fried chicken, salad, and carrots
Tuesday — Tuna-noodle casserole, salad, and broccoli
Wednesday — Baked pork chops, salad, and baked potato
Thursday — Swedish meatballs, salad, and green beans
Friday — Baked chicken and rice, salad, and green beans
Saturday — Grilled marinated flank steak, salad, and baked potatoDo ya think that I hit a bonanza at the store for salad stuff for this time of year?! LOL! It’s a good thing that I’m fond of salads and green beans…giggle…
I spent $49 on this menu. Granted, I actually spent more at the store, but since I am a single eater I can ‘forward’ the expense to another week.The main dishes will be portioned up and put in the freezer so I may be eating for relatively free in the next few weeks;-D Had a good deal on green beans and potatoes. I like both, so I utilized the products!

8 oz of white mushrooms
1 lb beef, cut into cubes
1 tbs vegetable oil
6 cups beef broth
1 cup flour
Heat oil in large pot. Add the beef and brown.
Add 1/2 cup of flour while stirring the beef cubes.
Add mushrooms, cook for about 10 minutes.
Add the beef broth.
Slowly stir in the rest of the flour.
Simmer for 20 min until the sauce thickens.
Serve with rice or noodles.
