I’m so glad that you found my menu ‘delish.’ …giggle… AND I will gladly share my Sweet Potato Casserole with you;-D I really try to have at least one meatless or fishless meal each week — a good way to use up leftovers or items on hand!
Sweet Potato Casserole
3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 tsp vanilla
1/2 cup milk
1/2 cup melted butter
Topping:
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish.Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned. Serves 6 to 8.
Hope that you enjoy it!I forgot to mention that I spent $41.27 at the grocery store this week;-D This was spent on the items that were not in the freezer or pantry. Sooo…I came in under my intended budget — good thing, too, as I have to drop off a load of dry cleaning this week. I swear…the next time someone gives me clothing that requires dry cleaning, I’m gonna try to return it!!!!!!!!!!!!!
:blushing:Beef and Mushroom Stroganoff
8 oz of white mushrooms
1 lb beef, cut into cubes
1 tbs vegetable oil
6 cups beef broth
1 cup flour
Heat oil in large pot. Add the beef and brown.
Add 1/2 cup of flour while stirring the beef cubes.
Add mushrooms, cook for about 10 minutes.
Add the beef broth.
Slowly stir in the rest of the flour.
Simmer for 20 min until the sauce thickens.
Serve with rice or noodles.
