Cauliflower au gratin is a delicious moist casserole style side dish of cauliflower, cheese and topped with buttered breadcrumbs.
1 medium-sized cauliflower, Washed & cut into flowerettes
2 tablespoons flour
2 tablespoons butter
1 cup milk
1/4 teaspoon salt
1/2 cup grated cheese
1 cup buttered bread crumbs
Drop the cauliflower into enough lightly salted boiling water to cover, leave the pan uncovered,, and cook for about 15 minutes, or until tender, and drain. Since I’m often in a hurry and I prefer to steam our vegetables, I use ziploc veggie steamer bags & cook the cauliflower for 3 minutes.
In a small saucepan, melt the butter over medium heat until bubbly add the flour & salt, stirring till it forms a paste, add milk, whisking constantly until mixture is smooth and starts to boil. Immediately add cheese, stirring until cheese is melted, remove from heat.
Place the cauliflower in a greased baking dish pour the cheese sauce over the top, sprinkle generously with the bread crumbs, bake for about 12-15 minutes at 375, or until the crumbs are golden brown, and serve from the dish.
