Buffalo Chicken bites are delicious little morsels of shredded chicken and cheese within a perfectly seasoned buffalo hot sauce with the crunch and flavor of Hot Wings- without the mess. They make perfect party appetizers, or add a side salad for quick dinner.

I made a few changes, mainly because I'm not a big fan of frying foods. I added the crushed cornflakes to give the Buffalo Bites crunch.
3 cups shredded cooked chicken (About 1 store-bought rotisserie chicken, skin discarded)
2/3 cup Franks Buffalo Wing hot sauce
1 pkg cream cheese, softened
1 3/4 cups sharp or medium shredded cheddar cheese
1/4 cup chopped green onions
1 jalapeno (seeded and chopped finely) **optional**
1 cup all-purpose flour
4 eggs, lightly beaten
3 – 4 cups Corn Flakes cereal, crushed
3 T. Bread Crumbs
Preheat oven to 350˚F.
In a large bowl, mix cream cheese and hot sauce until smooth. Add green onions and chopped (or shredded) chicken. Stir in the cheddar cheese & chopped jalapeno (if desired). I like the additional kick from the jalapeno, but this is entirely optional.

In 3 separate bowls place flour, beaten eggs, and crushed corn flakes & bread crumbs.
Using a small cookie or ice cream scoop, scoop out small balls of chicken mixture, roll in the flour, then dip in the beaten egg and then into the cornflake/bread crumb mixture.
Place the balls on a cookie sheet. Repeat! Bake at 350 for 20-24 minutes. Serve with bleu cheese or Ranch dressing.
These lovely munchies can be frozen (uncooked) and then simply pop them into the oven (still frozen) and bake at 350F for 30 minutes.
