• Chinese Chop Suey

    A lovely warming dish of stir fried veggies with seasoned meat. This is a very simple throw together meal that can use leftover chicken, turkey or pork.

    1 can Bean Sprouts, Drained
    1 lb chicken pieces (raw), or 2 c. cut up cooked meat (pork, chicken or turkey) (diced pieces)
    2 Large Onions, cut into slices
    2 stalks celery, cut into slices
    1/4 tsp. Chinese 5 Spice Seasoning
    1 c. chicken stock
    3 - 4 Tbs. Soy Sauce
    1 Tbs. Cornstarch
    dash pepper
    1 T. olive oil

    In a large skillet heat 1-2 Tbs of
    olive oil. (I generally don't bother to measure this, I just lightly drizzle it into the bottom of the skillet). Once the oil is hot, add the sliced onions and celery and saute until they're nearly translucent. If using raw chicken pieces, add the chicken now and continue to saute over medium heat until chicken is no longer pink inside.
    If using leftover cooked meat, add the meat, bean sprouts, Chinese 5-spice seasoning and dash of pepper. In a small bowl combine the cornstarch into Cold chicken stock, mixing well. Pour over stir fry, stir well, cover and simmer about 2 minutes, until sauce is bubbly and slightly thickened.

    Serve
    over hot rice. Season with a touch of Garlic salt and black pepper before serving.

    This is one of lovely comfort food dishes that is very simple to throw together in a short period of time and can easily be extended to serve more people by adding another can of bean sprouts.

      Made this last night for dinner as I had some leftover chicken- it was so good and without all the salt of take out Chinese. I will be making this again for sure! Thank you for all the wonderful recipes.
