9 c. Chex Cereal (Corn Chex, Rice Chex, Chocolate Chex or any combination of the 3 equaling 9 cups total)1 c. semi-sweet chocolate chips
1/2 c. peanut butter
1/4 c. butter or margarine
1 tsp vanilla extract
1 1/2 c. powdered confectioners sugar
Measure the cereal into a large bowl and set aside.
In a microwavable safe bowl combine chocolate chips, peanut butter, and butter and nuke for 1 minute. Remove from microwave, stir, return to microwave and nuke for another 30 seconds. Remove from microwave, stir- if the mixture is still not smooth, nuke another 30 seconds. Repeat until smooth. Stir in Vanilla.
Pour over cereal, stirring until cereal is evenly coated. Pour powdered sugar over the bowl. Seal tightly with saran wrap (or you can invert a plate over the bowl, but hang on to it carefully!) Shake gently to coat the cereal well with powdered sugar.
Store in sealed container or ziploc bag.
