Ocean Wiggle is an absolutely dirt cheap recipe that is very versatile. It consists of of either Tuna, shrimp or crab in a lovely cream sauce served over biscuit halves, toast points or saltine crackers.
In the photo here, I've used crab meat, which isn't exactly cheap for most families, but in our case, it was free. We go crabbing several times a year, cook & clean them and freeze the meat for use in various recipes throughout the year. If you don't have access to cheap crab meat you can use shrimp (which also go on sale for less than $5 a pound several times per year) or tuna- which can frequently be purchased for $1 a can.
3 T. Margarine or butter
3 T. Flour
1/2 tsp. Old Bay Seasoning
dash of salt
1½ c. Milk
1 can Tuna, drained or 1 c. Shrimp chopped, or 1 c. Crabmeat, chopped
1 c. frozen peas or 1 can Peas, Drained
Melt butter in a medium saucepan, add flour, mix till pasty, cook for 1 minute, stirring constantly. Add milk and whisk constantly over medium heat until the sauce thickens and is bubbling slightly, (do not bring to a rolling boil). Add the tuna (or shrimp or crab) and peas. Stirring constantly until bubbling, add old bay seasoning (if you have it) otherwise sprinkle with salt and pepper to your taste preference.
Serve over toast points or biscuits or saltine crackers. (Saltine crackers are particularly delicious if you use Tuna, it imparts the perfect amount of salt!)
Sprinkle with freshly chopped parsley just before serving, if you have it.
