Delicious breakfast bars filled with your favorite flavor of jam for a filling, tasty breakfast on the go. Whether the kids are heading out to the school bus, off to play dates or seasonal activities, these make ahead bars are perfect.

You’ll Need:

Bars:
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup Old Fashioned oatmeal
1/2 cup sugar
1/2 cup butter or shortening, softened
1 egg
1 cup blackberry, strawberry, raspberry or any flavor jam EXCEPT freezer jam

Topping:

1/4 c. White flour
1/4 c. Whole Wheat Flour
1/4 c. Old Fashioned Oats
1/4 c. butter
1/2 cup chopped walnuts

Heat oven to 350°F. Line the bottom of an 8″x8″ pan with foil, or parchment paper.

In medium bowl prepare the base of the bar by adding flours, sugar, oatmeal, butter and egg, mixing with an electric mixer on low speed until crumbly. Press the bar dough into the bottom of the prepared pan.

Spread the Jam evenly over the dough. Here I’m using homemade blackberry jam.

In a small bowl combing the ingredients listed for the topping. Sprinkle generously over the top of the bars.

Bake for 40-45 minutes, or until golden brown, cool completely before cutting. Makes 12 bars

This can be made even less expensively if you make your own jams/jellies. In this batch we used Blackberry Jam- it cost us .97 to make 6 jars of jam, the blackberries were wild & we picked them for free, the pectin in the jam was marked down to .10 a container at the end of season last year. If you raise chickens, as we do, your eggs will be free as well (provided you feed them naturally & don’t have to purchase food).

      Love the idea of adding ground flax seeds!

    • hrm, I’m wondering if there’s any difference if not made with an electric mixer? I haven’t got one. ;(

      No difference in taste, just a tad more work.
