This particular recipe is more than dirt cheap for our family to prepare in the fall, the apples are free from the tree in our front yard, the sweet potatoes came from our garden and the sausage we made ourselves for a whopping $1.72 per pound. All in all, the entire cost of this recipe for us was $1.75, or .29 cents per person. In addition to being dirt cheap, it also happens
1 pound ground sausage
2-3 medium raw sweet potatoes
3 medium apples
3 tablespoons brown sugar
1 tablespoon flour
1 tsp teaspoon ground cinnamon
1/4 c. water
Salt & Pepper
Brown the ground sausage in a hot a skillet. While it's browning, peel and slice the sweet potatoes and apples. A mandolin slicer works perfect for creating nice, even slices (which helps improve baking time!).
In a small bowl mix brown sugar, flour and cinnamon. Place the apple slices in a bowl and sprinkle with the brown sugar/ cinnamon mix, until all pieces are lightly
Place a layer of sweet potatoes on the bottom of a casserole dish, add a layer of cinnamon apples, then repeat. Sprinkle 1/4 c. water over the casserole. Top the casserole with lightly browned (but not fully cooked) sausage. Sprinkle lightly with a dash of salt and pepper. Cover tightly with foil and bake at 375 for 50-60 Minutes.
Serve it with a side salad and some fresh rolls with cinnamon butter.
