• Game Day Football Whoopie Pies

    This is one of those, "What am I gonna bring to the party?" kind of recipes when you don't have a lot of time! These delicious whoopie pies are simple to make and will be devoured before halftime!

    1 Box of Chocolate Cake Mix (any brand will do)
    3 Eggs
    1/2 cup Vegetable Oil
    1/2 Cup Water

    For the Buttercream Filling
    1 1/2 stick of butter
    3 cups Powdered Sugar
    2 1/2 tsp vanilla extract


    Preheat the oven to 350F, Lightly spray a cookie sheet with non-stick spray

    In a large mixing bowl whisk eggs,
    oil and water together until smooth. Add the cake mix and stir well until batter is smooth and lump free. It will be quite thick.

    Spoon the batter into circles on the cookie sheet, use the back of the spoon to spread the dough into foot ball shapes. It works a little easier if you lightly spray the back of the spoon with non-stick spray. Keep them small as they spread when they bake.



    Bake 10-12 minutes, remove from oven, transfer cookies to a cooling rack to cool completely before frosting.

    While the rest of the cookies are baking, whisk the room temperature butter with half of the powdered sugar and 1 tsp of the vanilla, once
    fully blended add more powdered sugar and the remaining vanilla until white and fluffy.

    Assemble the whoopie pies - spread or pipe the buttercream filling on the underside of 1 cookie, top with another cookie.

    Place some frosting in a piping bag with a thin writing tip or in a small baggie with a tiny bit of the corner cut off.

    Draw the laces on and repeat until all the footballs are complete.



    Makes 18 (You might want to make a double batch!)
