1 Box of Chocolate Cake Mix (any brand will do)
1/2 cup Vegetable Oil
1/2 Cup Water
For the Buttercream Filling
1 1/2 stick of butter
3 cups Powdered Sugar
2 1/2 tsp vanilla extract
Preheat the oven to 350F, Lightly spray a cookie sheet with non-stick spray
In a large mixing bowl whisk eggs,
Spoon the batter into circles on the cookie sheet, use the back of the spoon to spread the dough into foot ball shapes. It works a little easier if you lightly spray the back of the spoon with non-stick spray. Keep them small as they spread when they bake.
Bake 10-12 minutes, remove from oven, transfer cookies to a cooling rack to cool completely before frosting.
While the rest of the cookies are
Assemble the whoopie pies - spread or pipe the buttercream filling on the underside of 1 cookie, top with another cookie.
Place some frosting in a piping bag with a thin writing tip or in a small baggie with a tiny bit of the corner cut off.
Draw the laces on and repeat until all the footballs are complete.
Makes 18 (You might want to make a double batch!)
