1 cantaloupe or honeydew melon
1 package (4-serving size) JELL-O® Apricot or Orange Sugar Free Gelatin
1 cup boiling water
3/4 cup cold water
Cut melon in half lengthwise; scoop out seeds and drain well. In a small bowl dissolve gelatin in boiling water, then add cold water. Chill until slightly thickened. Pour into prepared melon halves and chill until firm,
Cut in wedges and serve immediately, Makes 8-12 servings depending on how thick you choose to slice them.
