Create delicious low-fat melon wedges for a lighter-fare Holiday snack or dessert.
This recipe is a favorite regardless of the season.

1 cantaloupe or honeydew melon
1 package (4-serving size) JELL-O® Apricot or Orange Sugar Free Gelatin
1 cup boiling water
3/4 cup cold water

Cut melon in half lengthwise; scoop out seeds and drain well. In a small bowl dissolve gelatin in boiling water, then add cold water. Chill until slightly thickened. Pour into prepared melon halves and chill until firm, about 3 hours.

Cut in wedges and serve immediately, Makes 8-12 servings depending on how thick you choose to slice them.
