Salmon is a wonderfully heart healthy food high in Omega 3, protein and other vitamins and can great deals on fresh fillets can often be found in the early spring.
2 TBS Dijon mustard
4 tsp honey
2 tsp chopped fresh parsley
1/4 cup Panko bread crumbs
1 lb salmon filets, cut into 4 pieces
Preheat the oven to 450°F.
Sprinkle liberally with Panko and freshly chopped parsley. If you don't happen to have fresh parsley you can either used dried or skip it altogether.
Bake 15 minutes for each inch of thickness, or until the fish is flaky. Alternatively the fillets can be grilled as well.
