The following recipe is very forgiving and easy adaptable, for example, if you happen to have some leftover taco meat, you can use that in place of the sausage, just top it with mozzarella or shredded cheddar instead. A note about the sausage in this recipe, we frequently make our own sausage, sometimes
2 Medium size whole zucchini
1/4 c. freshly grated parmesan cheese
1 whole tomato, diced
1 lb Sausage (the spicier, the better!)
Preheat the grill on Medium/high
Cut the zucchini in half lengthwise and scoop out the flesh, leaving about 1/2" to 3/4" thick shell. Set them aside. Heat a heavy skillet over medium/high heat, when the pan is sufficiently hot, add the sausage and cook until no longer pink and browned throughout. Drain any
Mix the diced tomato in with the sausage, then stuff the zucchini halves as full as you can. Top with freshly grated Parmesan cheese and place them on the hot grill grates. Cook about 6-8 minutes or until they reach your preferred level of softness. We like them to still be hot, but still firm.
These are excellent on their own or served with steamed rice or salad.
