Sweet pineapple, tangy mandarin oranges and fork tender pork in a delicious sweet and sour sauce is perfect for a busy weeknight, it takes only 30 minutes to cook and less than 5 minutes to prepare.
As we mentioned the other day, we're trying out our new digital pressure cooker
and trying to create some delicious recipes that can be prepared in less than 30 minutes for fast dinners on busy weeknights. If you don't have a pressure cooker and still want a no-effort recipe, we suggest using a slow-clooker for this recipe. The only difference would be that BEFORE you go to work for the day, dump all the ingredients in the slow cooker, set it on low and leave it until you get home.
1 can pineapple chunks, undrained
1 can mandarin oranges, drained
Country Style Pork Ribs
1 Jar LaChoy Sweet & Sour Sauce (not duck sauce)
Place the meat in the pressure cooker, If you'd like, you can brown the meat first in the bottom of the cooker, by following the manufacturers directions. (This is available on certain models only. I didn't have this option as I took the ribs out of the freezer much too late in the day and they were still frozen when I threw them into the pot!)
Then add the pineapple, juice and all and the sweet and sour sauce. Set the pressure cooker for 30 minutes (choose the pork option). In 30 minutes, the timer will go off, let it release steam naturally for a few minutes.
Open the lid, then dump in the mandarin oranges, give it a brief stir, close the pot for 2 minutes. Serve with side salad, jasmine rice, fried rice or any other side dish that your family enjoys.
