Pressure Cooker Corned Beef Dinner
Normally a complete Corned beef dinner would take 8-10 hours on high in a slow cooker, or several hours on the stove, but here's how to make a complete corned beef dinner of fork-tender corned beef, carrots, potatoes and cabbage with only 10 minutes of prep work and about an hour and 20 minutes of no effort cook time that leaves you open to do whatever else is on your "To Do" list . . .
1 (3-4 lb) corned beef
1 red onion, peeled and quartered
1 lb carrots (use baby carrots or a whole package of carrots peeled and cut into 1/3rds)
1 medium head of cabbage cut into wedges
4-6 red potatoes, scrubbed clean and cut in half
1 Bottle of your favorite Beer (Lager)
Put the corned beef into the pressure cooker (fatty side UP) and dump in any of the juices from the package. Most corned beef comes with a seasoning packet, sprinkle this seasoning into the pressure cooker as well. Add the quartered onion. Dump a full beer over the top. Shut the lid and set it for 60 minutes. Walk away, go do whatever else you have on your list of things to do!
In 1 hour, when the timer goes off, let the pressure natural release for about 10 minutes, then hasten the process a bit by releasing the pressure manually. Add the Potatoes, carrots. Seal the pressure cooker and set it for 8 minutes (press start). When the cycle completes, release the pressure manually and add the cabbage. Set the timer for 3 minutes, press start.
Release the pressure manually and serve.
