Whoopie Pies are traditionally a New England treat and these decadent confections are a favorite of mine! You'll love the light flakes of peppermint that adorn the sweet fluffy buttercream frosting, complimenting the chocolate cakes with the perfect flavor accents!
For the Whoopie Cookies:
1 Box of Chocolate
1/2 cup Vegetable Oil
1/2 Cup Water
For the Buttercream Filling
1 1/2 stick of butter
3 cups Powdered Sugar
2 1/2 tsp vanilla extract
Preheat the oven to 350F, Lightly spray a cookie sheet with non-stick spray
In a large mixing bowl whisk eggs, oil and water together until smooth. Add the cake mix and stir well until batter is smooth and lump free. It will be quite thick.
Spoon the batter into circles on the cookie sheet, Keeping them small as they spread when they bake.
Bake the cookies for 10-12 minutes, remove from oven, transfer cookies to a cooling rack to cool completely before
While the rest of the cookies are baking, whisk the room temperature butter with half of the powdered sugar and 1 tsp of the vanilla, once fully blended add more powdered sugar and the remaining vanilla until white and fluffy.
Assemble the whoopie pies - spread or pipe the buttercream filling on the underside of 1 cookie, top with another cookie. Roll the whoopie pies in crushed peppermint snow.
