- 3 c. Fresh Spinach
- 2 c. Sharp Cheddar Cheese (shredded/grated)
- 1 c. milk
- 1/4 c. Parmesan Cheese
- 4 c. Rotini Pasta, Shells or Macaroni (whatever you have on hand!)
- 6 slices of bacon- cooked and chopped into pieces
I know some recipes that make a cheese sauce call for flour, personally, I Loathe the texture of flour based cheese sauces, so I've omitted it.
Bring a large pot of water to a boil, add pasta and cook (al dente). In the meantime, in a small saucepan combine cheddar cheese and milk over low heat, stirring continually. Once the cheese sauce is smooth, add parmesan cheese and continue stirring, add cooked chopped bacon.
