• 2014 $50 Budget Menu Plan Week #9

    2014 $50 Budget Menu Plan Week #9: Generally speaking this time of year (right around the Daytona 500) we're able to score some decent deals on beef, but with the current market prices, this year, we only managed to find 1 marked down filet, which was still $8 a Pound. Since I planned to make a Beef wellington this week, I grabbed it anyway.

    We purchased the following: Fresh Pineapple, organic tomatoes, bananas, string beans, bella mushrooms, sweet potatoes, red potatoes, OJ, blueberries, broccoli,
    coconut milk (canned), mango, Plain Greek Yogurt, lettuce, green peppers, worcestershire sauce, garlic, Lime Juice, Prosciutto

    From our Backyard: Fresh Eggs (Getting nearly 2 dozen per day again!)

    From our Windowsill: Fresh Celery, Fresh Scallions, Fresh Basil

    From the Farmers Market- we decided this week after talking with a fellow last week to bring 14 dozen eggs with us to the Farmers Market and what I got in return was 5 Large Cantaloupe, half a Flat of Strawberries, 3 Giant Onions and a some asparagus. So it appears cantaloupe will be making its way onto the menu plan pretty heavily!

    Total spent this week on groceries $58.44

    Options for this week
    : Fresh Fruit - Bananas, Fresh Berries, fresh Cantaloupe

    As usual We'll throw together a fruit salad to snack on and eat for breakfast, along with the following choices:

    Monday February 24th:

    • Lunch:Crabmeat salad on toasted sourdough bread
    • Dinner: Amish Poor Man's Steak, Roasted Herb Potatoes, steamed garlicky Green beans

    Tuesday Feb 25th:

    • Lunch: Honey Dijon Egg Salad
    • Dinner: Dragonfire Salmon with Pineapple Pico de Gallo on Coconut Jasmine Rice, steamed broccoli

    Wednesday Feb 26th:

    Thursday Feb 27th:

    Friday Feb 28th:

    • Lunch: Anything Goes Veggie Quiche (All the leftover veggies chopped & thrown into a quiche)
    • Dinner: Beef Wellington, Steamed Asparagus spears, Whipped Mashed Potatoes

    Saturday March 1st: Late Evening out with Friends

    Sunday March 2nd: Leftovers all day

    • Lunch: Fish tacos using leftover whitefish
    • Dinner: Leftover Wellington & baked potatoes

    Various Snacks & Desserts:

    • Fresh Fruit Choices Available-
      Apples, Bananas, Fresh Pineapple, Fresh Berries
    • Lemon Chiffon Cake
    • Homemade Peanut Butter Granola Bars
    • cantaloupe Sorbet
    • Berry Sorbet

    Drinks Available:
    * Iced Tea (Unsweetened or Sweet Tea)
    * Coffee
    * Hot Chocolate/Cocoa

    Less Likely to be used, but still available:

    * Copycat Gatorade
    * CopyCat Arizona Green Tea
    * Lemonade
    * Iced Coffee Drinks
    * Almond Milk
    FYI: The salmon and whitefish are fish that we have caught ourselves. The crabmeat mentioned in this weeks menu is also something we catch ourselves several times per year and then freeze.
