    Huli Huli is an old Hawaiian phrase that means "turn" and was frequently used to refer to when it was actually time to turn the meat being cooked over a smoky pit. Meat was often sandwiched between two grills and turned during cooking.

    You'll Need:
    1 cup packed brown sugar
    3/4 cup ketchup
    3/4 cup reduced-sodium soy sauce
    1/3 cup sherry or
    chicken broth
    2-1/2 teaspoons minced fresh gingerroot
    1-1/2 teaspoons minced garlic

    5 lbs skinless chicken thighs or breast, cut into strips
    2 Green Onions/Scallions
    Combine the brown sugar, ketchup, soy sauce, sherry (or broth), gingerroot and minced garlic, mixing well to incorporate all the flavors. Place the meat strips in a large marinating dish or in Gallon zip-close bags, pour all but 1/3 cup of the marinade over the chicken strips. Seal the bag and refrigerate for at least 2 hours prior to cooking.

    If you prefer kebabs,
    soak the wooden skewers in cold water for 20 minutes, then thread the chicken onto the skewers. Place them in a marinating dish and pour the marinade over them. Refrigerate at least 2 hours prior to cooking

    Heat the Grill, lightly coat with oil or grilling non-stick spray, Grill the chicken over a closed hot grill for about 6 minutes per side, basting with the reserved marinade.

    Sprinkle with sliced green onions just before serving.

    Serves 12 People

    This recipe is fabulous for making ahead of time and using the chicken throughout the week for wraps, sandwiches, chicken salads, etc.
