• Potato Bar Chili

    Here's an inexpensive tasty yet filling dish to feed a crowd.. Potato Bar Chili. This entire meal figures out to be about .51 per serving, so it's very inexpensive to prepare, yet filling and healthy. This recipe is known as "potato bar chili" - it makes a hearty crockpot style dish to bring to gatherings, for a crowd you could just wrap the baked potatoes in tinfoil to keep them hot by placing them in a small cooler that has been washed thoroughly.

    You'll Need:
    1 1/2 pounds ground turkey or beef
    2 medium onions, chopped
    1 medium green pepper, chopped
    1 can (28 ounces) diced tomatoes, undrained
    1 can (16 ounces) chili beans, undrained
    2 tablespoons sugar
    2 teaspoons chili powder
    1/4 teaspoon salt
    1/4 teaspoon pepper
    Cheddar Cheese, shredded
    Baked potatoes or sweet potatoes

    Brown the ground meat or turkey in a skillet, then drain any excess grease. Add the diced onions and peppers, saute about 3 minutes, then add tomatoes, chili beans, sugar, chili powder, salt and pepper. Bring it to a boil, reduce the heat and simmer about 12-15 minutes, stirring occasionally.

    Serve the chili over freshly baked potatoes or sweet potatoes, top with cheddar cheese.
