This easy throw together salad combines the flavors of slightly bitter arugula leaves with a naturally sweet pear, tangy dressing and crunch of cashews (or roasted pumpkin seeds).
For the Dressing:
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon chopped thyme
Salt and freshly ground pepper
1/4 c. Extra Virgin Olive Oil
3 Tbs your Favorite Balsamic Vinegar
2 tsp honey
1/2 tsp fresh chopped thyme
dash of black pepper
baby arugula leaves
pears, peeled & Cored
Roasted Cashew or Walnut Pieces
Feta cheese, crumbled
Sea salt, for sprinkling
The amounts for this salad are entirely dependent on how many people you plan on serving it to. You can make a single salad or make enough for a crowd
Mix the olive oil, lemon juice, honey and fresh thyme , whisking to incorporate the flavors together fully. Season lightly with salt and pepper.
Prepare the salad, mix the arugula leaves, chunks of pears, and nuts, then sprinkle with crumbled feta cheese. Top lightly with dressing and serve immediately.
If you really want to bring out an amazing sweetness in the pears, grill them briefly on a hot grill (lightly oil the grates or they'll stick!).
If nuts are expensive in your area, you could use roasted pumpkin or squash seeds that have been lightly seasoned with salt instead of the nuts. If you'd like to add a slightly nutty flavor without using nuts, you can add a tablespoon of Flax seeds to the salad, sprinkle them on!
