* 1 pkg navy beans
* 1/2 pound raw bacon (or 1/4 pound salt pork cut into cubes)
* 1 onion, diced
* 1/3 c. molasses
* 1 teaspoon salt
* 1 teaspoon
* 1 teaspoon dry mustard
* 3 T. Brown Sugar
* 1/2 tsp Baking Soda
* 6 Cups water
Rinse the beans thoroughly in a strainer, be sure to check for possible stones.
Soak the beans in cold water overnight in a large pot, covered. In the morning add baking soda and heat to boiling, reduce heat to med-low and simmer 10 minutes.
Drain in a colander placed over a large bowl (to reserve the liquid!!), do NOT discard the liquid.
Dump beans, salt pork, onions in a crockpot. Add Molasses, sugar, mustard, salt, pepper and 2 c. of liquid, stir thoroughly. Add enough liquid to cover the beans. Cover the pot/crockpot
Serve with Side salad and cornbread. Or Brown Bread and hotdogs, whatever you prefer!
