Mexican Baked Fish

A delightful baked fish dish that cooks rapidly can easily be made in tinfoil packets while camping! This recipe is simple to prepare and can utilize any light white fish.

* 1 1/2 pounds Fresh (not frozen) cod, Whitefish or Catfish Fillets, rinsed
* 1 cup salsa
* 1 cup shredded sharp Cheddar cheese
* 1/2 cup coarsely crushed corn chips
* 1 avocado – peeled, pitted and sliced
* 1/4 cup sour cream

If using thawed frozen fillets- please note that they will create alot of “juice” in the bottom of the pan, resulting in a “poached” fish, rather than a Baked dish.

Making at Home: Place fish fillets in a lightly greased 9×13 pan. Pour the salsa over the top, top with shredded cheeses and crushed corn chips. Bake in a preheated 400F oven for 12-15 minutes or until cheese is melted and fish flakes (when a fork is inserted).

Top with a dollop of sour cream and a few avocado slices. Serve with Rice, Black beans & Margaritas!

Camping Directions:

Fold a section of tinfoil to create a “boat” with high sides, you’ll need 1 per person. Lightly butter the bottom of the tinfoil. Add a fish fillet to each packet pour a bit of salsa over the top, sprinkle with shredded cheese, top with crushed corn chips. Place over hot coals until cheese is melted and fish flakes with a fork.

Top with a dollop of sour cream and a few avocado slices.
