Here is a simple, light recipe that utilizes fresh garden cucumbers and fresh mint. It’s perfect for a light lunch on a really hot day.
3 Cucumbers, peeled, seeded and diced
1 c. Plain Yogurt
dash salt & pepper
3 Lg Ice cubes
Fresh Mint Leaves, to taste
In a blender combine 3 peeled seeded and chopped cucumbers, a cup of plain yogurt, pinch of salt and pepper. Blend until smooth. With the motor running add 3 ice cubes one at a time. Add a big handful of fresh mint leaves and blend again. Serve soup with sliced hard cheese and crackers for a little added zip.
Alternatives:
Add 1/8 tsp minced garlic
