Combine the flavors of ripe cherry tomatoes at their peak with abundant fresh basil drizzled with seasoned olive oil over perfectly cooked farfalle pasta, complemented with bite size mozzarella.
1 1/2 Pounds Cherry Tomatoes, Quartered
2 Cloves Garlic, minced
15 Basil leaves, torn into small
1/2 Pound Mozzarella, fresh, diced
Extra Virgin Olive Oil
1 Pound Farfalle Pasta
Salt and Fresh pepper
Combine mozzarella, tomatoes, basil, garlic and 1/2 c. olive oil in a large mixing bowl; season generously with salt and pepper. Set aside at room temperature to allow the flavors to develop.
Cook the pasta al dente. Rinse with cold water, drain well. Toss with the seasoned tomato/mozzarella mix. Serve
For added kick, add some chopped/diced salami.
