For many, Meatloaf is comfort food- a simple throw together meal that can created using any number of ingredients. When I was a kid, I recall my mother using a can of condensed Campbells chicken noodle soup along with cornflakes cereal in her meatloaf. Don’t worry- this recipe doesn’t contain anything exotic, but the flavors are sure to melt in your mouth.

* 1 pound ground beef or turkey
* 1 egg
* 1/4 c. finely diced onion
* 1/4 c. milk
* 3 T. dried Italian Bread crumbs or crushed Ritz -type crackers
* salt and pepper to taste
* 1/2 c. Sweet Baby Rays Spicy BBQ Sauce

Mix the ground beef, egg, onion, milk, bread crumbs and half of the sweet baby rays bbq sauce all together, add salt and pepper. Mix until thoroughly combined.

Form into a small pan, top generously with remaining sweet baby rays sauce.

Bake at 375F for 25-30 minutes. Serve with taters and salad for a fast, healthy meal.

Okay, I know that the choice of BBQ sauce isn’t the cheapest out there, but you can substitute if you like, it’s the only brand I actually buy, but only if it’s on sale!

This one makes enough for 3 people plus leftovers, if making it for the whole family, double the recipe. Generally, this is a recipe that I make for lunch or when the kids have other plans (like sports night where they’re eating with their teams).

By the way, you can get ground turkey for $1.26 lb at Aldis!

  1. Made this for dinner tonight, and the guys really liked it. I used onions from the garden and our own “ketchup-chili-barbeque” sauce. I also added a bit of thyme. Nice, easy recipe!:thumbup:

  2. Thank you so much for this recipe! I tripled the batch and I forgot to add salt and pepper but it was still delicious! So easy to make.
