A lovely casserole style dish that offers a zesty sauce with a touch of both spice and honey smothered in a hearty apple stuffing.
2 T. Dijon Mustard
2 T. Honey
2-3 c. chopped up cooked pork (leftover roasts work great!)
1 box (or 1 recipe) of Stove Top Stuffing
1/2 apple, peeled, cored and finely diced
Preheat oven to 350F
Mix stuffing according to directions, add finely diced apple, set aside. In a small bowl combine honey and dijon mustard, mixing until smooth. Pour over cooked pork, stirring well to coat all pieces. Pour into a 9×13 casserole dish, top with the apple stuffing. Cover with tinfoil. Bake for 15 minutes, remove tinfoil, bake 5-10 minutes more.
Serve with steamed veggies and cranberry sauce.
