One of my most requested recipes, these chocolate chip muffins are super easy to throw together, are delicious warm or cold and make great afterschool snacks.
2 c. Flour
3 tsp. Baking Powder
1/2 tsp salt
1/2 c. sugar
1/4 c. melted butter
1 c. milk
1 c. Semi-Sweet Chocolate Chips
In a medium bowl combine flour, baking powder, salt, sugar. Stir well to combine all ingredients. Add eggs, melted butter, and milk, stirring until the dry ingredients are moistened, but do NOT overstir. Fold in the chocolate chips.
Grease muffin tins with non-stick spray, fill them 2/3 full
Bake in a 400F oven for 15 minutes.
Makes 6 Super Large Muffins, 12 regular muffins or 24 mini-muffins
These freeze well and can be frozen, then wrapped individually with saran wrap. To reheat a frozen muffin, remove it from saran wrap, wrap in a paper towel and place in the microwave for 25 seconds.
