Cinnamon Apple Muffins

Fill your kitchen and home with the delicious aroma of cinnamon and nutmeg spiced apple muffins. The dry ingredients for this recipe can be mixed up ahead of time and the wet ingredients added later for a simple quick breakfast or snack.
This recipe is one of my favorites to make into mini-muffins. They make great snacks for the kids when they’re on the go, mess free and are delicious without any additional butter.

You’ll Need:

2 c. Flour
3 tsp. Baking Powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 c. sugar
2 eggs
1/4 c. melted butter
1 c. milk
1 c. shredded apple

In a medium bowl combine flour, baking powder, salt, sugar, cinnamon and nutmeg. Stir well to combine all ingredients. Add eggs, melted butter, and milk, stirring until the dry ingredients are moistened, but do NOT overstir. Fold in the shredded apple.

Bake in a 400F oven for 15 minutes. Makes 6 Super Large Muffins, 12 regular muffins or 24 mini-muffins

These freeze well and can be frozen, then wrapped individually with saran wrap. To reheat a frozen muffin, remove it from saran wrap, wrap in a paper towel and place in the microwave for 25 seconds.
