Chicken Stir Fry

Stir frying is a cooking technique similar to sauteing. The difference being that usually a round bottom pan (called a wok) is traditionally used. Here is a great dish that is very inexpensive to prepare with all the flavor of traditional stir-fry, without the wok.

You’ll need:

1 large onion, washed and sliced
1 bag frozen stir-fry veggies
1 pound boneless skinless chicken, sliced into thin strips or diced
1 stir-fry seasoning mix
1/4 c. Cold Water
1 T. olive oil

In a large skillet heat 1 T. olive oil until very hot, add slice onions and saute over medium-high heat, stirring occasionally. Cook the onions until they are almost translucent, add the chicken, stirring occasionally until nearly cooked through and browned on all sides. Add the frozen vegetables and continue cooking for 3-4 minutes.

Mix the seasoning mix and cold water until thoroughly blended, Pour over the chicken and vegetables, stirring often until sauce thickens and vegetables are hot throughout.

Other Options: If you prefer a more “Asian” flavor, add 1 to 2 Tbs of Soy sauce to the seasoning mix

This goes very well with steamed rice (brown, white or jasmine!) for a very healthy, delicious dinner.
