Meatball spinach stew is a hearty, healthy frugal dish that uses very little meat, yet feeds 4 easily. Your tastebuds will rejoice in the taste of spinach, tomatoes, oregano and just the right balance of garlic in a lovely stew.
1/2 lb ground turkey (or beef)
1 c. diced onion, (divided)
3 cloves Minced Garlic (about 3 tsp finely minced), divided
2 tsp. Oregano (dried), divided
1/2 tsp Garlic Salt
20 Saltine Crackers, Crushed
1 egg, lighten beaten
28 oz Beef Broth
1 can Stewed Tomatoes, (undrained)
10 oz Spinach, chopped (Frozen spinach is fine, but be sure it’s thawed & drained)
1 T. Olive Oil
In a medium bowl mix 1/4 c. onion, 1 tsp garlic, 1/2 tsp Garlic Salt, 1 tsp oregano, crushed cracker crumbs and egg until well combined. Form into 1 ” balls, set aside.
In a large skillet/saucepan heat olive oil, add garlic and onions, sauteing for 3-5 minutes. Add broth, un-drained tomatoes, spinach, and 1 tsp oregano, bringing to a boil. Gently add meatballs (so it doesn’t splash!), cover, reduce the heat and continue to simmer 20 minutes (or until meatballs are thoroughly cooked).
This is a wonderful dish that serves 4 without leftovers.
