A mouthwatering blend of basil pesto, fresh garden veggies and juicy chicken, grilled to perfection for a healthy, dirt cheap meal.
You’ll Need:
2 c. Homemade Pesto sauce
Cut Up veggies, Your Choice- here we used fresh zucchini, Red Onions, Bell Peppers
2 Boneless Skinless chicken Breasts, Cut into chunks
It really doesn’t matter which veggies you choose to use, but here we’ve used cherry tomatoes, bell peppers, zucchini, and red onions. Marinate the cut up chicken cubes in your favorite pesto sauce for at least an hour.
Skewer the chicken onto kebob sticks, alternating with veggie chunks of your choice. Brush them liberally with pesto sauce.
Grill them for 7-9 minutes, turning occasionally, (or until they’re completely done). I’ve been told our grill cooks fast.
These are great for Low-Carb dieters (depending on which type of pesto you choose to use!).

1 Bell Pepper .69 (or less than .10 a piece if you grow your own)
1 onion .35 (or less than .04 a piece if you grow your own)
1 small Zucchini .50 (in season at the local fruit/veggie stand)
2 c. Pesto Sauce (from the garden) .43
